For over 35 years Dunkertons Cider have been making traditional cider and perry drinks. Using only carefully selected traditional cider apple and perry pear varieties, is the key to Dunkertons distinctive Organic ciders and perry.

The Cider & Perry making process

  • As soon as the apples and pears are ripe the fruit is quickly harvested and delivered straight to our cider mill for pressing.
  • Upon arrival the fruit is washed and then milled into a pulp. It’s then pressed in a belt press that pumps the extracted juice into our shining stainless steel vats.
  • The juice is then left to slowly ferment, bringing out the flavour.
  • After some time the cider and perry is then racked off ready to be bottled.
  • The bottling takes place at the cider mill where some of the cider is pumped across to wooden barrels that can be found in our shop.

Our Organic Cider

There are many different varieties of cider apples we use to make our Organic Cider. See below a selection of the apple varieties we use:

  • Balls Bitter Sweet
  • Yarlington Mill
  • Stoke Red
  • Breakwells Seedling
  • Browns
  • Court Royal
  • Sheeps Nose
  • Kingston Black
  • Knotted Kernel
  • Dabinett
  • Dunkertons Late

We frequently use Breakwells Seedling cider apples for their aromatic flavour. The Court Royal is delicate and fragrant where as the Yarlington Mill is full bodied with plenty of availability. Then you have the Knotted Kernel which is sweeter and more tannic. In some cases it is possible for us to use up to another 30 varieties in our cider making.

Our Organic Perry

Perry is particularly difficult to make as the pears need to be pressed as soon as they are blown off the trees in the autumn winds or fall from high branches in later frosts.

Dunkertons only ever use traditional Perry Pear varieties, such as:

  • Brandy
  • Thorn
  • Merrylegs
  • Moorcroft
  • Red Horse
  • Painted Lady
  • Judge Amphlett

Great care has to be taken after fermentation in racking off the juice from the lees to produce a bright, delicate and aromatic Organic Perry.
